La réussite de la production du houblon biologique exige une connaissance pointue des variétés, car toutes les variétés de houblon ne sont pas adaptées à la culture biologique. Le Gruppe Bio Hopfen propose un large panel offrant de nombreuses possibilités aussi bien aux brasseuries traditionnelles qu’aux brasseurs en recherche de nouveaux arômes.
Tettnanger
Description
The Tettnanger variety is an old country variety that belongs to the Saazer mould circle. It is grown exclusively in Tettnang. The hop variety has a sweet, flowery aroma in combination with slightly woody notes.
Flavor aroma:
Floral note, slightly woody aroma, red berries (blueberries).
Flavor in the beer:
Mild intensity and harmonious bitterness, hop-fruity note.
Tradition
Description
The Tradition variety is a breeding of the Hüll Hop Research Centre. It gives the beer a very fine, mild, almost sweet aroma (including apricots) with a slightly spicy, herbaceous note.
Hop flavor:
Spicy and herbaceous notes, distinct citrus aroma, sweet fruits (apricot, cherries).
Flavor in the beer:
Intense, harmonious bitterness with a green-grassy note.

Blanc
Description
Hallertauer Blanc is a cross between the Cascade variety and a male Hüll breeding strain. It is also a robust and stress/drought tolerant variety with a floral-fruity aroma. The hops show a distinct aroma of tropical fruits like mango, passion fruit as well as pineapple and grapefruit.
Hop flavor:
Floral-fruity, mango, passion fruit, grapefruit, gooseberry and pineapple.
Flavor in the beer:
Green fruits, mango, gooseberry
Callista
Description
The hop variety Callista was created by crossing the varieties Hallertauer Tradition and a Hüll male breeding strain. Characteristic for this variety is the fruity, berry aroma (wild berries), which is rounded off by a slightly hoppy note.
Hop flavor:
Hoppy, spicy, fruity, sweet fruits like apricot and passion fruit, wild berries, grapefruit.
Flavor in the beer:
Classically hoppy in bottom-fermented and top-fermented beers (Helles, Pils, Märzen, Weizen); in dry hopping: fruity aromas such as passion fruit, grapefruit, peach, gooseberry, pine
Mandarina
Description
The Mandarina comes from a breeding between the Cascade and a Hüll breeding strain. The agronomic characteristics of this variety are also its robustness, as well as stress and drought tolerance. Characteristic is the hoppy, fruity aroma smelling of lemons and tangerines.
Hop flavor:
Hoppy, fruity, fresh, tangerine and citrus notes.

Hoppy, tangerine and orange aroma
Melon
Description
The hop variety Melon comes from the breeding of the varieties Cascade and a male Hüll breeding strain. The fruity, sweet aroma is particularly captivating with flavours of honeydew melon and apricot.
Hop flavor:
Fruity, sweet, honeydew melon, apricot and strawberry.
Flavor in beer:
Sweet aromas, honeydew melon, apricot, strawberry.
